One of the most intricately crafted releases of Fever to date. This is a very refined orange wine from one of the Yarra's best.
Picking date for each variety was dictated by the site. Blended and co-fermented over a long 40 day ferment in open fermenters. Pinot Gris and Gewürztraminer skins included. 100% wild ferment and malo. Old barrique and puncheon aged without sulphur for 9 months. Bottled unfined and unfiltered with minimal sulphites added.
Flowery aromatics. Frangipani, blossom, lavender, apple cider vinegar (in a good way). There's tangerine and tart citrus with a soft creaminess and a crisp chalkiness in the mouth. Clean and crunchy with all varieties seamlessly fused together to create a rich tapestry of a wine. This is a unique drink and it's very well done.
