Miniscule release of whole bunch Nebbiolo from one of the Yarra's most unique characters, the one and only Timo Mayer.

Amazing colour, vivid garnet with faintest bronze. Bold bouquet of sweet earth, new leather, sour cherry, rose hip tea. Striking. The palate is wildly crunchy, almost glass-shard like in its crackle and mad angles, then slips into a tongue-on-the-roof-of-mouth rolling pucker with more of the sour cherry and rose hip tea-like character. Wonderful drinking, delivering fine and unique tannin profile with bright-as-a-button flighty nebbiolo character. Cool as, yet serious. Brilliant in its way

It's fair to say Timo Mayer loves him some whole-bunch/carbonic maceration action. It works brilliantly when applied to lighter red varieties. Case in point - this Gamay has come up trumps...

The fruit was grown on relatively old Gamay vines in the Yarra Valley. The 2022 season giving Timo beautifully balanced and concentrated fruit to play with. Gamay can be a simple affair, but in the hands of Timo with all it's wild and stalky edges, this variety sings.

Whole-bunch ferments with Syrah and Pinot Noir, in particular, are very in vogue at the moment, but whole-bunch with Cabernet? Are you crazy?! Well, don't knock it 'til you've tried it...

Timo Mayer's Cabernet is 100% whole-bunch, the man does not do things by halves. The benefit here is that the tannins and textural elements of the wine can be derived from the stalks and seeds as well as the skins and it drastically reduces your need for heavy oak influence to impart structure. Of course, this also means that the wine is fresher, more 'alive' in its youth, and doesn't require decades in the cellar to look the goods.

If a wine could talk it would spruik you a Ginsburg poem, a little left of centre yet undeniably beautiful and thought-provoking all at once. Just try it, you might just fall in love with Cabernet in a way you never have before.

Mayer “Volcanic” Syrah 2021

The Timo Mayer Volcanic Syrah, like the Pinot Noir, comes from volcanic, red basalt soils, although this time from near Gembrook. It shows a wonderful mix of bright cherry and plum fruitiness on the nose, as well as some minerality, but after a bit of airing, the dark fruits start to shine, bringing with them some spicy tones.

The palate is silky and rich, with great concentration of flavour and a tannin structure that gives it grip and interest in the mouth. It finishes with orange and smokiness, delivering another captivating Timo Mayer

Timo Mayer only makes a tiny amount of Syrah each year.

The majority of the Mayer vineyard is planted to Pinot Noir but a small amount of Syrah makes an appearance on the upper reaches of the Hill. He makes the Syrah in the same way as his charismatic Dr. Mayer Pinot Noir with 100% whole bunches during ferment.

In this part of the Yarra it is possible to make sublime Syrah. Timo's is ethereal, ferrous and a little mysterious, an excellent example of the variety's potential in the region.

Lovers of spicy, detailed Syrah with power and structure - you'll want to try this... But you'll need to be quick.
