Delicacy and purity of variety front and centre. Roses, both fresh and dried, cherries and white strawberry with peppery notes and a swet floral lift. Strawberry and aniseed. A great pop to the fruit. Beautiful, elegant Nebbiolo here. Beguiling and slender. Love it.
100% Destemmed fruit is held at 10 degrees for cold maceration for 4 days prior to gentle warming and the onset of natural fermentation. The wine is held on skins for 28 days and regularly plunged throughout. After pressing, maturation occurred in old barrels for 7 months at cold temperatures without sulphur. Then racked, lightly sulphured and put back to barrel for another 2 months before bottling unfined and unfiltered. Just over a year in bottle to soften out a touch.
