This is Watervale Riesling with more character and texture than the 'classic' styles of wine the region is famous for.\u003c\/p\u003e\n\u003cp\u003eThe fruit spent \u003cspan\u003esix hours on skins, wild fermentation in steel and ceramic amphora, and ten months on fine lees. No fining, no filtering, just a tiny bit of sulphur before bottling.
