An elegant wine, the 2016 Allegra shows minerality and a delicate acid drive from a cool vintage. Fine acidity and complex spice on the nose, this Chardonnay is clearly built to last. The oak is well integrated and the fruit encompasses the complex structure making this a wine that is a delicious drink now, but one that we can’t wait to see in a few more years.

The Fruit for the Allegra Chardonnay was sourced entirely from the historic Rebenberg Vineyard on Mount Duneed, an area first planted with vines in 1858. The premium fruit was hand-picked from over 35 year old vines yielding less than one tonne/acre. Fruit was whole bunch pressed and run into 100% new French oak puncheons (450-500L) without prior clarification. Fermentation occurred with indigenous yeast. Following the end of fermentation, malolactic fermentation occurred in barrel with natural yeasts. Wines were left in barrel on gross lees for a further 15 months prior to marriage and bottling. Extended bottle maturation of this wine will allow the tight complex character of this wine to develop.

Vibrant stone fruit with hints of citrus dance across the palate with support from some toast and spice from the oak. 2018 shows amazing promise to cellar for decades.

Fresh nectarine, ginger spice and a touch of cream wound together with zesty
acidity. This Chardonnay should develop over the next 5-10 years in the cellar, retaining acidity and the fruit flavours developing into grilled
nuts and baked nectarines.

The fruit for this wine comes from the Suma Park Vineyard on the Bellarine Peninsula yielding one tonne/acre. The hand-picked fruit was whole bunch pressed into 100% new French oak puncheons for fermentation and MLF by indigenous yeast on full solids. The wine components were then matured in 30% new French oak barrels on gross lees for a further 11 months prior to blending and bottling.

From the Lethbridge, Hat Rock, Hillside Haven and Suma Park vineyards all located in the Geelong GI. The grapes for this wine were hand picked, whole bunch pressed and barrel fermented with wild yeast. The wine was allowed to go through malolactic fermentation and then aged for 11 months on fine lees in 40% new French oak barriques. A vibrant wine where a riot of orchard aromatics are the prelude for a floral palate of fig and white nectarine overlaying a a delicate creaminess, beautiful drinking.

Hand-picked, whole-bunch pressed, wild yeast ferment in a 1200l foudre and stainless steel. Australian pinot gris seldom displays complexity, but here you have it. Aromas range through rose water and poached pears, grape skin and ginger, a similar suite of flavours present on the long and textured palate. Juicy, slightly astringent acidity completes the finish.

You heard it first from us back in 2012, Pinot Gris is officially ‘the next big thing’. Apparently there are now more Pinot Gris vines in Australia than there are Riesling vines and there are more Pinot Gris vines in Australia than in France! In France, Pinot Gris is grown in Alsace, in Australia it is grown everywhere. Region and climate are as important as winemaking style. Made predominantly from Geelong grown Savagnin, the grapes were whole bunch pressed and fermented in barrel. After the initial fermentation took place, we let the barrels ullage allowing a natural flor yeast to grow on top of the wine. Over the course of 7 years this flor consumed the alcohol & nutrients in the wine creating nutty, lemon zest flavours. All the while the oxidative ageing created flavours of walnut, almond and mushroom. Mainly from vintages '13, '14 and '15, blended together to balance the youthful zest and aged nutty characters, this is a delicious drop best enjoyed with an aged hard cheese or comté souffle."
