Made predominantly from Geelong grown Savagnin, the grapes were whole bunch pressed and fermented in barrel. After the initial fermentation took place, we let the barrels ullage allowing a natural flor yeast to grow on top of the wine. Over the course of 7 years this flor consumed the alcohol & nutrients in the wine creating nutty, lemon zest flavours. All the while the oxidative ageing created flavours of walnut, almond and mushroom. Mainly from vintages '13, '14 and '15, blended together to balance the youthful zest and aged nutty characters, this is a delicious drop best enjoyed with an aged hard cheese or comté souffle." Palest gold in colour with a nose that is redolent of honeysuckle, ripe white nectarines, lemon zest and a hint of grapefruit. Hints of toasted brioche, shortcrust pastry and clotted cream add richness and sandalwood spice and salty notes bring savoury complexity as the wine opens up in the glass. On the palate the wine is zesty with juicy lemon and grapefruit flavours and acidity, salted green pineapple notes and peach skin phenolics. The finish is long, firm and refreshing. Eastern Peake Griffins Road Chardonnay 2023, Ballarat’s high-altitude rocket fuel.

It explodes with white peach, finger lime and raw almond, then slams in a wave of crushed rock and sea-salt tension. The palate is coiled-spring tight: creamy yet razor-sharp, driven by ripping acidity and a chalky, saline finish that refuses to quit. Pure 2023 cool-climate adrenaline.

Whole bunches straight to press, wild ferment and full malo in 300 L Siruge and Stockinger hogsheads, zero racking, left on full lees, bottled straight from barrel, unfiltered, barely any SO2. The Griffins Road block (I10V5 clone, planted 1995 on volcanic grey loam) is farmed hard-organic by the Lattas.

What a fantastic value for money Chardonnay.

In 2021 a decision was made to produce an "Introductory level" Chardonnay from both our own & sourced fruit (from vineyards that go under the Latta range). This wine is again made up from 5 vineyards (Eastern Peake, Mount Coghill, Two Mile Hill, Pirrepoint & Moonambel).
All individual sites were whole bunched pressed, fermented naturally in 300L hogs heads & 228L (30% new) barriques, racked after 12 months élevage to tank, always full malo, no fining or filtering, bottled 4 months later from racking. A small amount of sulphur post malo & pre bottling.

Planted 1999, Dash Farms sits perched at over 450m asl on the Southern granitic slopes of Mt Alexander (Leanganook) looking back towards Mt Macedon and the Macedon Ranges. Like Ray- Monde, it sits just outside the Macedon Ranges GI. Ripening for Chardonnay occurs around a week earlier than my family’s vineyard Cobaw Ridge.

These lean granite soils and high altitude confer both concentration and freshness at low sugar levels.

Once hand harvested with careful sorting in the vineyard, the bunches were partially crushed by foot and very gently pressed. Overnight settling then occurs before transfer to a combination of new Stockinger 300l oak and Burgundian piece for fermentation and lees ageing for 12 months.

This is then followed by four months in stainless steel on fine lees, before racking and bottling, unfined and unfiltered. The only addition to the wine is a small dose of sulphur.

Pale with a green edge, Dash Farm offers glass filling aromas of crushed rock lemon and grapefruit rind, jasmine and spice. Flavours carry through to a dense and powerful palate with savoury complexity and a fine acid line.

An elegant wine, the 2018 Allegra shows minerality and a delicate acid drive from a balanced vintage. Fine acidity and complex spice on the nose, this Chardonnay is clearly built to last. As always, the Allegra is fully barrel fermented and aged for 11 months in new French puncheons. Vibrant stone fruit with hints of citrus dance across the palate with support from some toast and spice from the oak. 2018 shows amazing promise to cellar for decades.

The Fruit for the Allegra Chardonnay was sourced entirely from the historic Rebenberg Vineyard on Mount Duneed, an area first planted with vines in 1858. The premium fruit was hand-picked from 48 year old vines yielding less than one tonne/acre. Fruit was whole bunch pressed and run into 100% new French oak puncheons (450-500L) without prior clarification. Fermentation occurred with indigenous yeast. Extended bottle maturation of this wine will allow the tight complex character of this wine to develop.

From the Lethbridge, Hat Rock, Hillside Haven and Suma Park vineyards all located in the Geelong GI. The grapes for this wine were hand picked, whole bunch pressed and barrel fermented with wild yeast. The wine was allowed to go through malolactic fermentation and then aged for 11 months on fine lees in 40% new French oak barriques. A vibrant wine where a riot of orchard aromatics are the prelude for a floral palate of fig and white nectarine overlaying a a delicate creaminess, beautiful drinking.
