An elegant wine, the 2018 Allegra shows minerality and a delicate acid drive from a balanced vintage. Fine acidity and complex spice on the nose, this Chardonnay is clearly built to last. As always, the Allegra is fully barrel fermented and aged for 11 months in new French puncheons. Vibrant stone fruit with hints of citrus dance across the palate with support from some toast and spice from the oak. 2018 shows amazing promise to cellar for decades.

The Fruit for the Allegra Chardonnay was sourced entirely from the historic Rebenberg Vineyard on Mount Duneed, an area first planted with vines in 1858. The premium fruit was hand-picked from 48 year old vines yielding less than one tonne/acre. Fruit was whole bunch pressed and run into 100% new French oak puncheons (450-500L) without prior clarification. Fermentation occurred with indigenous yeast. Extended bottle maturation of this wine will allow the tight complex character of this wine to develop.

A Riesling with focus, precision and natural drive. The 2024 vintage captures that in spades. Bright and taut, it offers lime zest, green apple, white florals and chalky minerality, underpinned by crisp, racy acidity. There’s a little texture from time on lees, but the wine remains lean and clean.

It’s a style that leans into purity and line over showiness - more about quiet detail than loud expression. And while it drinks beautifully now, there’s no rush - this is classic cool-climate Riesling that will reward a few years in the cellar.

A super premium elegant Shiraz from a cool vintage, the wine exhibits a spicy nose with sour plum and black olive character. A beautifully structured wine with fine grained tannins, excellent length and persistence.

Following in the tradition, the Indra Block delivers another wine of exceptional quality. The fruit was hand picked from the low yielding Lethbridge Vineyard, Indra block and underwent a cold soak for 5 days. Natural fermentation ensued and was complete within 10 days. The wine was transferred to 100% new French oak and underwent a natural malo-lactic fermentation the following spring (October). The wine was racked once and then estate bottled in March 2012.

Outstanding concentration. Deep, inset spice. Meat, intense dark cherry, violet, velvet, polished cedarwood. Mannered but spunky. Curls of smoky tannin. Lots going on. Unfurls beautifully as it rests in the glass. Gun of a wine.

From vines yielding less than 1 tonne/acre, 100% whole bunch, natural yeast ferment,100% new oak. An unusual presentation of the MV6 clone in the Estate vineyard produces fruit of great density of flavour, and very low yield (0.5 tonnes/acre). This wine was fermented with 100% whole bunch inclusion and had pre-fermentation maceration for 7-10 days. Wild yeast fermentation in small open vats proceeded with daily pigéage. Pressing was straight to barrel (100% new French oak) to allow for gross lees contact and natural MLF. A powerful and structural Pinot Noir.

Fresh nectarine, ginger spice and a touch of cream wound together with zesty
acidity. This Chardonnay should develop over the next 5-10 years in the cellar, retaining acidity and the fruit flavours developing into grilled
nuts and baked nectarines.

The fruit for this wine comes from the Suma Park Vineyard on the Bellarine Peninsula yielding one tonne/acre. The hand-picked fruit was whole bunch pressed into 100% new French oak puncheons for fermentation and MLF by indigenous yeast on full solids. The wine components were then matured in 30% new French oak barrels on gross lees for a further 11 months prior to blending and bottling.

The grapes for this wine were hand picked, whole bunch pressed and barrel fermented with wild yeast. The wine was allowed to go through malolactic fermentation and then aged for 11 months on fine lees in 40% new French oak barriques. A vibrant wine where a riot of orchard aromatics are the prelude for a floral palate of fig and white nectarine overlaying a a delicate creaminess, beautiful drinking.

The 2024 season started with early budburst due to a warm start to spring. The rest of the growing period was relatively cool and this Pinot Noir expresses this colder vintage. This wine is made with natural yeast and was fermented with 50% whole bunches for up to four weeks. Each block of fruit is fermented and aged separately in 20% new French oak barrels. The wine was blended before bottling in February 2025, the goal of which is to layer the complexities of each site and create the truest expression of Geelong Pinot Noir as a region in 2024. Tart red cherry and cranberry notes are on full display, with delicate hints of whole bunch spice. This wines is fine boned, but the soft tannins and vibrant acidity provide impressive length and complexity.

Hand-picked, whole-bunch pressed, wild yeast ferment in a 1200l foudre and stainless steel. Australian pinot gris seldom displays complexity, but here you have it. Aromas range through rose water and poached pears, grape skin and ginger, a similar suite of flavours present on the long and textured palate. Juicy, slightly astringent acidity completes the finish.

You heard it first from us back in 2012, Pinot Gris is officially ‘the next big thing’. Apparently there are now more Pinot Gris vines in Australia than there are Riesling vines and there are more Pinot Gris vines in Australia than in France! In France, Pinot Gris is grown in Alsace, in Australia it is grown everywhere. Region and climate are as important as winemaking style. Our Pinot Gris is all from cool climate vineyards yielding less than 2 tonne/acre. It’s an out-and-out ripper. Smoky, bunchy, well-fruited, dense, finessed, so many things. Powerful lines delivered with grace. It’s excellent throughout
but the finish has that extra something.

Sourced from four single vineyards in Geelong, two in the Moorabool Valley (Hillside Haven & Springbank) and two from the Bellarine (Hat Rock &
Suma Park). All fruit was hand-picked and fermented separately to keep the individual vineyard characters distinct. Each parcel was treated the same; wild yeast fermented with around 40% whole bunches. The wine was then matured
for 10 months in 40% new French oak barriques. After rigorous tastings we blended the wines to create this wonderful Pinot Noir in the Lethbridge style.

Made predominantly from Geelong grown Savagnin, the grapes were whole bunch pressed and fermented in barrel. After the initial fermentation took place, we let the barrels ullage allowing a natural flor yeast to grow on top of the wine. Over the course of 7 years this flor consumed the alcohol & nutrients in the wine creating nutty, lemon zest flavours. All the while the oxidative ageing created flavours of walnut, almond and mushroom. Mainly from vintages '13, '14 and '15, blended together to balance the youthful zest and aged nutty characters, this is a delicious drop best enjoyed with an aged hard cheese or comté souffle." 13+ years in the making, Nadeson Collis are the brainchild of husband and wife winemakers Ray Nadeson & Maree Collis.

The NADESON COLLIS ‘Inception’ is a blend of Chardonnay & Pinot Noir, 15 months on lees with 1.5g/l dosage.

Using the finest Chardonnay & Pinot Noir from Drumborg, Henty the grapes are whole-bunch pressed and fermented in a mixture of barriques and foudre. 75% from the 2017 vintage with 25% reserve wine coming from a perpetual blend that has been developing since 2006.

The delivery service is available from Monday to Saturday. We will deliver within two working days for orders received by 3:00pm Monday to Friday, depending on the delivery area. Orders received on Saturdays, Sundays or public holidays will be delivered the day following the next working day.

2. South Lantau:

We offer FREE delivery (single location only) for purchases over HK$2,500.

For orders under HK$2,500, a delivery charge of HK$300 shall apply.

The delivery service is available Tuesday & Wednesday.

3. Discovery Bay:

We offer FREE delivery (single location only) for purchases over HK$3,500.

For orders under HK$3,500, a delivery charge of HK$500 shall apply.

The delivery service is available on Thursday only.

Delivery service will be suspended when typhoon signal No.8 or above or a black rain warning is hoisted. In this event, customers will be contacted to re-schedule the delivery time.

We reserve the right to charge an additional delivery fee if the recipient is not available to accept the delivery at the given delivery time and delivery needs to be rescheduled.
