Hand-picked, whole-bunch pressed, wild yeast ferment in a 1200l foudre and stainless steel. Australian pinot gris seldom displays complexity, but here you have it. Aromas range through rose water and poached pears, grape skin and ginger, a similar suite of flavours present on the long and textured palate. Juicy, slightly astringent acidity completes the finish.

You heard it first from us back in 2012, Pinot Gris is officially ‘the next big thing’. Apparently there are now more Pinot Gris vines in Australia than there are Riesling vines and there are more Pinot Gris vines in Australia than in France! In France, Pinot Gris is grown in Alsace, in Australia it is grown everywhere. Region and climate are as important as winemaking style. Our Pinot Gris is all from cool climate vineyards yielding less than 2 tonne/acre. “Whoa! In the green herb, white pepper and mezcal characters! Strap in. Lighter weight, a sluice of red cherry, rose hip cherry, all of this tightly wound with those green herb and peppery notes, skinny in its jive and cinched with ultra fine, silty tannin lending a long, drying pucker post sips. Fragrant, frisky, needs some time to see it elevate, but even now has a slinky swagger that should drag pinotphiles in. Sleek, elegant, personality plus."

This is the Koerner brothers' take on the famed Cabernet Malbec blend from the Clare Valley. There are many who believe that these two varieties are the region's best suited and the Koerners certainly make a bold case for it here.

The fruit from their Gullyview Vineyard was picked for freshness coming in at an astonishingly low 12.5% ABV. Though power was not sacrificed, the intensity and depth of flavour here is a regional marvel. A much more traditional wine here from the Koerners, albeit with their own twist. Quality and longevity were certainly front of mind when they brought this to bottle. This is their finest wine to date and something that should live a long and distinguished life for a decade or two to come.

Hand harvested and sorted in vineyard. Destemmed retaining 50% whole berries with no whole bunch. Natural ferment in open top steel fermenters, hand plunged twice daily. 3 weeks on skins. Free run and pressings combined. Settled off gross lees for 7 days. Aged in Slavonian and French Demi-muid for 10 months, then racked to steel for 2 months.

This is Cabernet handpicked at perfect ripeness, foot-stomped and left to soak on skins for six months in amphora, then basket pressed and settled for a further three months in a large clay pot.

This is one of the purest examples of top-end Margaret River Cabernet you are likely to find. No additions bar a dash of SO2 to stabilise the wine in bottle. Courageous winemaking and whole-hearted trust in the quality of her fruit conspiring here into one of the region's most idiosyncratic and delicious Cabernet wines.

It's about fruit first and foremost, her trusting the vineyard and her instincts on when to pick to ensure that all structure in the wine is derived from the grape rather than an oak tree.

The Timo Mayer Volcanic Syrah, like the Pinot Noir, comes from volcanic, red basalt soils, although this time from near Gembrook. It shows a wonderful mix of bright cherry and plum fruitiness on the nose, as well as some minerality, but after a bit of airing, the dark fruits start to shine, bringing with them some spicy tones.

The palate is silky and rich, with great concentration of flavour and a tannin structure that gives it grip and interest in the mouth. It finishes with orange and smokiness, delivering another captivating Timo Mayer
