I have a distinct soft spot for the Cabernet wines produced by the pioneering wineries of Central and Western Victoria, many of which seem ageless even now.
Vintage 2022 saw the ideal mild ripening conditions for the classic medium-bodied and finely structured style of wine I love, while opportunity arose to work with three new vineyard sources. These perfect circumstances led to the realisation of a long held desire - the first wine in what will be a series of one-off blends based around old vine material from Central and Western Victoria. A distinct nod to the great multi-regional tete de cuvée blends of the 50s and 60s.
Four historically significant sites contribute to the Old Vine Cuvée (single vineyard releases of each will follow later in the year.)
Late ripening Greytown Shiraz and Cabernet Sauvignon co-planted in the 1950s by European migrants in sandy loam overlying quartz and ironstone rich gravels in the North-
Eastern corner of the Heathcote GI, the vines are dry grown and produce incredibly concentrated clusters at low sugar levels, full of tannin and complexity.
Balgownie 1970 Block Cabernet Sauvignon should need no introduction, the legendary vineyard planted by the visionary Stuart Anderson. Kickstarting the modern Central Victorian wine industry from his base in Maiden Gully, Bendigo and producing wines with a revered cellaring track record. Gravel, quartz, sandstone and shale make up the soil profile and imbue huge tannic depth and complexity to the fruit.
Similarly to the early work done by Stuart Anderson, Neill Robb established his Redbank winery in the heart of the Pyrenees in the 1970s, which now supplies to me a small parcel of Cabernet Sauvignon. Again dry grown, and again rooted deep in shale, quartz and clay soil, the blocks are also overlayed with water holding red, iron rich loam. Ball bearing-sized berries enable picking at moderate sugar levels, with a deep and exotic fruit profile.
The Williams Vineyard, also planted in the early 70s by Laurie Williams - an early sounding board and guide to so many local vignerons - has intrigued me since childhood. Planted in decomposed granitic gravel on the outskirts of the Kyneton township, I’ve passed it most days of my life travelling to or from my family’s Cobaw Ridge estate. A small holding of just a few acres of Cabernet Sauvignon and Merlot and once bottled as ‘Flynn and Williams’ the resultant wine in its heyday enjoyed a similar reputation to those of Virgin Hills and Balgownie.
The Old Vine Cuvée is comprised of 45% Greytown, 37.5% Balgownie, 15% Redbank and 2.5% Williams Vineyard. A higher proportion of press wine was retained for the blend, and elevage took place for 12 months solely in one-year-old blonde toasted barrels - 300L “hogsheads” from Stockinger and 228L “Magic Casks” from Laurent.
No fining, filtration or additives other than a small amount of sulphur dioxide.
Glass staining deep purple, the aromatics are strikingly redolent of the Australian landscape, scrub and wild herb, sunbaked red earth, cocoa, pepper and spice complexity engulf dark, perfectly ripened blackberry and cassis fruit. Violet floral top notes lend a sense of airiness to the otherwise saturated aromas.
While the flavour profile remains dark and saturating on the palate, it is built around layer upon layer of fine fruit tannin - keeping the wine medium-bodied and lively.

The fruit comes from Mount Gambier and Heywood in South West Victoria. This is Xavier’s original flagship wine. Made to make people happy. As Xavier says, it's everything that a Pinot Noir should be! The grapes are 100% destemmed and fermented in stainless steel for 2-3 weeks. Pressed and aged in a mixture of stainless and old barrels then filtered and bottled in August. Simple.
This Pinot has a translucent bright ruby colour, it’s dazzling. It starts with a bouquet of flowers, cherry blossoms, rose petals and hibiscus. There are umami notes of fresh hazelnuts in skins, game meat and wet forest floor. Flavours are full of cranberry juice and tart cherries with a hint of sweet kirsch character. It has a light touch, savoury finish and lifted acidity. Very moreish, so easy to drink.

Pinot Gris from Mount Gambier direct pressed for soft extraction of colour and phenolics. Fermented and aged in stainless steel to showcase the purity of fruit and left on lees for 5 months for a gentle yeasty complexity and texture. Made with varietal perfume and crisp texture in mind.
The colour has a golden hue with ever so light pink reflections. Beautifully expressive, full of orchard fruits, yellow pears and red apples, tangerine peel, honeyed blossoms and a hint of tropical fruits like pineapple skin. Then comes freshly baked brioche, that tasty leesy complexity. Flavours have a lovely ginger spice, a crunchy bite that makes your mouth water and a dust of cinnamon to top things off. A true, expressive and textural Gris with a great refreshment factor.

Table loaf, table wine, table beer... an everyday ale, low in alcohol, highly drinkable and 100% can conditioned. Bright citrus hop notes and soft earthy spice characteristics interlaced by creamy soft grains.
Brewed with regenerative organic Schooner barley and wheat from Organically Greenwood Farm in Coleambally NSW, organic NZ Motueka hops and fermented with our house mixed culture of yeast and bacteria wholly foraged from native flowers in NSW.
Tasting notes: A really reminiscent batch of table beer. Initially is all limey hop character followed by the familiar spicy fermentation esters from our house culture. Very dry and effervescent with a subtle acid line at release. Slightly increased bitterness on the final back palate leaves a really refreshing finish.

St Abigail is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW refermented with white peaches. It is named for Emily and Chris’ second daughter. Saint Abigail was a medieval healer and beekeeper from County Clare, Ireland.
In 2024, St Abigail was made by blending barrel aged golden mixed culture fermentation ale with 454kg of fresh, hand picked, whole, tree ripened white peaches from Thornbrook Orchard in Orange, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature before release.

Varietal(s): Ale fermented and aged in oak without addition of yeast or bacteria
The 2024 blend, like the '21, '22 and '23, is an ale made with certified organic heritage malted barley, raw wheat and aged hops, all wholly grown in Australia. Brewed in Katoomba using an intensive turbid mash, extended three hour boil and cooled in copper coolship overnight exposed to the environs of the Blue Mountains world heritage site. Fermented and aged in oak without addition of yeast or bacteria.
This blend contains ales brewed in the winters of each 2021, 2022 and 2023 which have aged for three, two and one year respectively before being blended in late 2024 and bottled. This year's blend is composed of of five, 500 litre puncheons: one of three years of age, one of two years of age and three of one year of age.
In marrying beers of three different brewing seasons, we have for the second time in our Village series been able to most closely mirror the common blending compositions of Belgian Gueuze, something we have been working and aiming towards since long before these beers were ever brewed.
