Timo Mayer's Cabernet is 100% whole-bunch, the man does not do things by halves. The benefit here is that the tannins and textural elements of the wine can be derived from the stalks and seeds as well as the skins and it drastically reduces your need for heavy oak influence to impart structure. Of course, this also means that the wine is fresher, more 'alive' in its youth, and doesn't require decades in the cellar to look the goods.

If a wine could talk it would spruik you a Ginsburg poem, a little left of centre yet undeniably beautiful and thought-provoking all at once. Just try it, you might just fall in love with Cabernet in a way you never have before.

Miniscule release of whole bunch Nebbiolo from one of the Yarra's most unique characters, the one and only Timo Mayer.

Amazing colour, vivid garnet with faintest bronze. Bold bouquet of sweet earth, new leather, sour cherry, rose hip tea. Striking. The palate is wildly crunchy, almost glass-shard like in its crackle and mad angles, then slips into a tongue-on-the-roof-of-mouth rolling pucker with more of the sour cherry and rose hip tea-like character. Wonderful drinking, delivering fine and unique tannin profile with bright-as-a-button flighty nebbiolo character. Cool as, yet serious. Brilliant in its way

All whole bunch, all the time. This is a blend of all major plots across the vineyards on the Mayer estate.

The Mayerist theme of finesse and delicacy is continued in the pinots with this lovely 100% whole bunch example. There’s an extra degree of subtlety and mystery in this with the stalks and whole bunch adding prettiness, structure and gentle complexity to the delicious light to mid weight cherry infused palate. Mouthfeel is beautiful, acidity firm and tannins are pretty serious too. Again if drinking now decant extremely well. The best is yet to come!

It's fair to say Timo Mayer loves him some whole-bunch/carbonic maceration action. It works brilliantly when applied to lighter red varieties. Case in point - this Gamay has come up trumps...

The fruit was grown on relatively old Gamay vines in the Yarra Valley. The 2022 season giving Timo beautifully balanced and concentrated fruit to play with. Gamay can be a simple affair, but in the hands of Timo with all it's wild and stalky edges, this variety sings.

Timo Mayer's first crack at a Sangiovese. 100% whole bunch. 1000% attitude.

Sadly, no Gamay in the 2019 Timo Mayer line up, but the upside is we do get a few new delicious things to try in its place!

This new Sangiovese from Dixon's Creek is a belter. It's an electric, nervy example of the variety. The 100% whole bunch ferment to many would seem like madness when applied to Sangiovese. The variety has tannin in spades.

For some reason, it works a treat in this wine. It's a lighter expression than you might expect, the juice shines ruby red in the glass. The fruit is sweet and spicy, the tannins are super fine and detailed.

It's a one-of-a-kind Sangiovese from a one of a kind winemaker.

Mayer “Volcanic” Syrah 2021

The Timo Mayer Volcanic Syrah, like the Pinot Noir, comes from volcanic, red basalt soils, although this time from near Gembrook. It shows a wonderful mix of bright cherry and plum fruitiness on the nose, as well as some minerality, but after a bit of airing, the dark fruits start to shine, bringing with them some spicy tones.

The palate is silky and rich, with great concentration of flavour and a tannin structure that gives it grip and interest in the mouth. It finishes with orange and smokiness, delivering another captivating Timo Mayer
