Each year grapes for the GOED Chardonnay are sourced from the Macedon Edge vineyard located 8kms
from our property in Tooborac. All grapes were handpicked on the 21st of March 2021.
Steady winter rains led to very healthy overall soil moisture, which resulted in some superb plant vigour and
growth. Spring was a little delayed, and the temperatures were on the cooler side, however that being said
things dried out quickly. For the most part fruit set was modest probably driven by some rather gusty weather,
particularly during flowering, which is a little unfortunate. However, the fruit was fantastic and the plants
super healthy, (particularly if you compare it to last year’s super dry beginning). A little cooler than most
vintages and hence in some instances harvest was a tad delayed, though the mini heat wave late in the season
did wonders in helping the plants push ripeness resulting in some great looking fruit to work with. The season
was a little challenging from a disease pressure prospective but overall, the yield and quality were superb.
Foot stomped before gently pressing into stainless steel. Cold settled for 60 hours then racked and transferred
to new and old French oak for primary and secondary fermentation. Matured for 14 months in oak and a
further 3 months in stainless steel prior to bottling. Bottles unfined & unfiltered.

The Assemblage is a composite blend of vineyards from across the Mornington Peninsula and is matured in vast French oak barrels called Foudre. These beautiful barrels have very thick staves and wine matures slowly, ensuring that the delicate aromas and flavours are not lost. The resulting wine is vibrantly flavoured with silky, supple structure and ready to enjoy earlier without sacrificing intensity or character. 2019 was another record breaking year for drought and heat. November was warm and dry, delivering an excellent balanced crop. Thereafter, the weather was remarkably dry and also quite hot in February which caused significant and atypical vine stress. Often these years are associated with overripe and low acid wines but curiously, although alcohols are up, the grapes were harvested with good acid. Why? Nobody knows. However, the resulting wine is dark, rich, vibrant and very delicious.

A delicate nose of lemon blossom and white petals. There is great presence and texture on the palate without being overwhelming. The wine is really pure and zappy with tangerine-like acidity, lively and wirey. This wine shows the restrained wine-making that lets the fruit be front and centre which is a good thing because this is some seriously good fruit.

"Probably the least complicated wine we make. Whole bunches are pressed cold after a night in the cool room. Full solids to two 500L puncheons to complete wild fermentation up to 25 deg C. Low sulphur maturation with a few stirs, racked and then coarsely filtered to bottle after 9 months."

Winemaker Notes

The base of the 2020 B5B White is Pinot Gris: split into two parts and fermented separately. The first part is destemmed, gently perssed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting in the foudre, Chardonnay, Riesling & Gewurztraminer juice are introduced at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy. This isn’t a new concept but rather a reimagining of chaptalisation.

A sunny disposition of citrus blossom & honeydew melon on the bouquet… much like that of a Sommelier introducing you to a new wine she has discovered. The palate… finely detailed with bright acidity, parmesan rind & a chalky grip reflecting the precise nature of a winemaker. Arneis… a friendly & peculiar Italian varietal that brought two school friends together again to produce a wine of passion, place and memories. We hope you enjoy drinking it as much as we enjoyed making it.

Winemaking Notes:

Hand harvested on the 24th March 2021. Cooled overnight before processing. Crushed and basket pressed- keeping pressing fraction separate. Free run fermented in old French barriques with native yeast. Pressings were hyperoxidized to knock out harsh phenolics, then racked to older French oak for ferment with native yeast. Matured on fermentation lees until spring.

Minimal fining and sulfur additions prior to bottling.

No fining = Vegan Friendly

Soil: Ordovician material approximately 460million years old. It contains basic volcanic material; sandstone, siltstone breccia and conglomerate derived from basalt and andesite

The Clayface wines are a micro batch winemaking project from innovative Margaret River winemaker, Josephine Perry.

The Clayface Chardonnay is picked the same day as the Dormilona Chardonnay from Jo's little organic vineyard in Wallcliffe. A small portion of fruit is kept separate, basket pressed directly to terracotta amphora and left alone to gently go through natural ferment and malo.

A whisper of sulphur the only addition on its way to bottle. A total of 500L of this wine was made. A tiny release of this incredibly charismatic Chardonnay and it is in hot demand.
