The Wallis vineyard typically affords the most delicate expression of Chardonnay in the Ten Minutes by Tractor portfolio, so in a cool year like 2011, the question becomes: how far will growing conditions push the site’s natural style? The answer is: excitingly far. The 2011 Wallis retains all the finesse for which this label is known, but the vintage’s extraordinary nature has produced an almost archetypal wine. The aroma presents a collection of notes primarily in the upper registers. Foremost amongst them is a sense of minerality, part powder and part perfume, that recalls fine fragrance. This is a first spray of your favourite summer eau de toilette, invigorating and complex, so precisely layered it seems designed that way. Alongside, there’s the smell of white flowers, delicate spice and, finally, hits of the citrus fruit that finds its full expression on the palate.

After a decade of warm and dry conditions the 2011 vintage broke the drought with over 600 mm of rain during the growing season versus an average of 350mm, the cool and wet conditions resulted in our latest harvest on record (16 April v 2 April average). Yields were reduced but those grapes that were picked were of good quality – great natural acidity and lovely flavours in our Chardonnay with the Pinot Noir benefitting from the long cool ripening (second longest veraison interval, 68 days v 57 day average).

The grapes were hand-harvested through the third week of April, whole bunch pressed and the unsettled juice was transferred to 25% new French oak barriques. Fermentation by indigenous yeasts preceded a partial (45%) malolactic fermentation in spring and regular stirring of lees was carried out over a 9 month barrel maturation. Bottled unfined after filtration.

A delicate nose of lemon blossom and white petals. There is great presence and texture on the palate without being overwhelming. The wine is really pure and zappy with tangerine-like acidity, lively and wirey. This wine shows the restrained wine-making that lets the fruit be front and centre which is a good thing because this is some seriously good fruit.

This Yarra Valley Chardonnay from the upper valley shows nutty, nectarine and white flower aromatics. A moreish savoury style with a crisp lemon/orange zest finish. We love it !

"Probably the least complicated wine we make. Whole bunches are pressed cold after a night in the cool room. Full solids to two 500L puncheons to complete wild fermentation up to 25 deg C. Low sulphur maturation with a few stirs, racked and then coarsely filtered to bottle after 9 months."

This is a very small production, produced from a 0.25 ha block of Chardonnay, situated on a gentle northeast-facing slope behind the winery. It comprises of two clones (g9v7 and Antav95), which were picked together.

Winemaking: whole bunch-pressed, settled then racked off gross solids to French oak barriques (50% new) for fermentation. The wine was on solids for 11 months, with some lees stirring. Four barriques were selected.

A sunny disposition of citrus blossom & honeydew melon on the bouquet… much like that of a Sommelier introducing you to a new wine she has discovered. The palate… finely detailed with bright acidity, parmesan rind & a chalky grip reflecting the precise nature of a winemaker. Arneis… a friendly & peculiar Italian varietal that brought two school friends together again to produce a wine of passion, place and memories. We hope you enjoy drinking it as much as we enjoyed making it.

Winemaking Notes:

Hand harvested on the 24th March 2021. Cooled overnight before processing. Crushed and basket pressed- keeping pressing fraction separate. Free run fermented in old French barriques with native yeast. Pressings were hyperoxidized to knock out harsh phenolics, then racked to older French oak for ferment with native yeast. Matured on fermentation lees until spring.

Minimal fining and sulfur additions prior to bottling.

Soil: Ordovician material approximately 460million years old. It contains basic volcanic material; sandstone, siltstone breccia and conglomerate derived from basalt and andesite
