Distinctly spiced with clove and black pepper. Broody fruit with hint of dark chocolate, sour cherry. Supple chewey texture.
40% whole bunch. Cold soak for 2 days before wine started to ferment with native yeast. 3 days on skins post fermentation before being pressed. Racked with fine solids to older french barriques for maturation.
Sulfured in spring with racking.
Minimal Filtration. No fining. Vegan friendly.
Soil:Volcanic derived brown loam over clay.
