Lighter weight, a sluice of red cherry, rose hip cherry, all of this tightly wound with those green herb and peppery notes, skinny in its jive and cinched with ultra fine, silty tannin lending a long, drying pucker post sips. Hand-picked, whole-bunch pressed, wild yeast ferment in a 1200l foudre and stainless steel. Australian pinot gris seldom displays complexity, but here you have it. Aromas range through rose water and poached pears, grape skin and ginger, a similar suite of flavours present on the long and textured palate. Juicy, slightly astringent acidity completes the finish.

You heard it first from us back in 2012, Pinot Gris is officially ‘the next big thing’. Apparently there are now more Pinot Gris vines in Australia than there are Riesling vines and there are more Pinot Gris vines in Australia than in France! In France, Pinot Gris is grown in Alsace, in Australia it is grown everywhere. Region and climate are as important as winemaking style. Our Pinot Gris is all from cool climate vineyards yielding less than 2 tonne/acre. The Timo Mayer Volcanic Syrah, like the Pinot Noir, comes from volcanic, red basalt soils, although this time from near Gembrook. It shows a wonderful mix of bright cherry and plum fruitiness on the nose, as well as some minerality, but after a bit of airing, the dark fruits start to shine, bringing with them some spicy tones.

The palate is silky and rich, with great concentration of flavour and a tannin structure that gives it grip and interest in the mouth. It finishes with orange and smokiness, delivering another captivating Timo Mayer

Demi is a mid-weight Shiraz with loads of character from three well-known vineyards in Heathcote. There's a fair amount of whole bunches used, giving lifted aromatics and spice. A lot of thought and detailed winemaking! A terrific introduction to a hugely exciting Victorian winemaker, and as far as Heathcote Shiraz goes this as good value as any!

12th release. The 2022 Demi by Syrahmi is a blend of three vineyards from the Heathcote region. Kennedy’s, Carl Brown, & Cavalry all make up the blend with a typical high percentage of whole bunch (+60%). Wild yeast fermentation and malolactic fermentation. Open fermenter, foot & hand plunging with minimal pump overs. Matured in new and seasoned French oak for 12 months and a further 3 months in stainless steel before bottling.

Xavier Goodridge “Avon” Chardonnay 2024

The Avon Chardonnay comes from a single hectare of old vines planted in 1987 at the Avon Vineyard, located in Maffra, Gippsland. Naturally lower yielding, these vines produce small, intensely flavored bunches that capture the purity and character of the site. With the help of ideal ripening conditions, the fruit came in beautifully balanced, carrying a fine line of minerality drawn from the quartz-rich soils of the vineyard. The fruit was hand-picked into 15kg baskets and hand-sorted directly into the press. Whole bunches were gently pressed, with the juice briefly settled in tank before being transferred to barrel for fermentation. The wine remained on full lees for 10 months, with barrels stirred once or twice prior to the completion of malolactic fermentation. It matured in French oak, 30% of which was new, and was racked in January before bottling in February 2025.
