“Cuvée de Chez” loosely translates as Cellar Blend and is Adrian’s interpretation of a traditional Bordeaux blend or ‘Claret’.

Adrian believes that when it comes to Bordeaux varieties, the sum is greater than its parts. Cabernet Sauvignon provides the tannin, length and structural backbone, Merlot contributes ‘the fuzzy ball of fruit’ in the mid-palate, Cabernet Franc red fruits and savouriness, Petit Verdot adds perfume and acid line and Malbec gives dark fruits and overall roundness to the finish. With this in mind, each variety was made to ensure its varietal strengths came to the fore.

Cabernet Sauvignon was crushed and de-stemmed whereas the other three varieties incorporated more whole berries. During fermentation, the timing and combination of pump-overs, “rack and returns”, pigeage and plunging was to preserve aromatics and perfume yet extract adequate tannins for structure and length, depending on the variety. Post-fermentation, the Cabernet Sauvignon was held on skins for a further 12 days than the other varieties. All wines were pressed to French oak barriques (29% new) for a16 month elevage.

Tete de Cuvee is a french term used to describe a winery's top release - the pride of the estate. To continue the french them, this is Adrian Rodda's paean to Bordeaux, a Cabernet Sauvignon blend that also features Merlot and a touch of Petit Verdot.

It's Australian Cabernet of high order, though firm and proud currently, and needing to cellar. Poised and dense, bathing in chocolate and blackcurrant flavours and held in check by ripe but potent tannins. The fruit source is the Smith's Vineyard, planted in 1978.

It's a first release, and a partner wine to the similarly excellent Triangle Block Chardonnay. Stash some in the cellar.

This is the Koerner brothers' take on the famed Cabernet Malbec blend from the Clare Valley. There are many who believe that these two varieties are the region's best suited and the Koerners certainly make a bold case for it here.

The fruit from their Gullyview Vineyard was picked for freshness coming in at an astonishingly low 12.5% ABV. Though power was not sacrificed, the intensity and depth of flavour here is a regional marvel. A much more traditional wine here from the Koerners, albeit with their own twist. Quality and longevity were certainly front of mind when they brought this to bottle. This is their finest wine to date and something that should live a long and distinguished life for a decade or two to come.

Hand harvested and sorted in vineyard. Destemmed retaining 50% whole berries with no whole bunch. Natural ferment in open top steel fermenters, hand plunged twice daily. 3 weeks on skins. Free run and pressings combined. Settled off gross lees for 7 days. Aged in Slavonian and French Demi-muid for 10 months, then racked to steel for 2 months.

Whole-bunch ferments with Syrah and Pinot Noir, in particular, are very in vogue at the moment, but whole-bunch with Cabernet? Are you crazy?! Well, don't knock it 'til you've tried it...

Timo Mayer's Cabernet is 100% whole-bunch, the man does not do things by halves. The benefit here is that the tannins and textural elements of the wine can be derived from the stalks and seeds as well as the skins and it drastically reduces your need for heavy oak influence to impart structure. Of course, this also means that the wine is fresher, more 'alive' in its youth, and doesn't require decades in the cellar to look the goods.

If a wine could talk it would spruik you a Ginsburg poem, a little left of centre yet undeniably beautiful and thought-provoking all at once. Just try it, you might just fall in love with Cabernet in a way you never have before.
